Lemon Risotto with Smoked Salmon


 

Servings: 2

Ingredients

  • One medium onion (finely chopped)
  • Two cloves of garlic (finely sliced)
  • 200g Arborio Rice
  • 400ml Vegetable stock
  • One Lemon
  • Small knob of butter
  • Salt
  • Pepper
  • 100g Smoked Salmon

Method

  1. Fry onion in a little cooking oil for 4 to 5 minutes.
  2. Add the garlic and continue to cook  for another minute.
  3. Stir in the rice and fry for 30 seconds.
  4. Add a little of the vegetable stock.
  5. Once the stock has evaporated add a little more stirring occasionally
  6. Continue doing this until the rice is almost cooked.
  7. Grate the rind of the lemon into the pan and add a little vegetable stock.
  8. When the rice is cooked squeeze the juice of the lemon into the pan.
  9. Season to taste.
  10. Add the knob of butter and stir in until completely melted.
  11. Serve the risotto into two bowls.
  12. Slice up the smoked salmon and scatter over the top of the risotto.
Smoked Makeral and Apple Bagels

Smoked Mackerel and Apple Bagels


Serves: 2

Ingredients

  • 2 Bagels
  • 3 Fillets of Smoked Mackerel
  • 1 Eating Apple
  • 4 tbsp Natural Yoghurt
  • 1-2 tsp Horseradish

Method

  1. Slice and toast the two bagels
  2. Mix together the Yoghurt and Horseradish
  3. spoon the Yoghurt and Horseradish mixture of the toasted bagels
  4. Core, half and slice the Apple
  5. place the sliced apple on top of the Yoghurt and Horseradish mixture
  6. break up the Smoked Mackerel into bite size chunks an place on the slices of Apple
  7. grind some black pepper over the top
